CURRIED RICE AND GREEN SPLIT PEA SALAD
1 - Quart water
1 c green split peas, rinsed and drained
1 c rice
1/3 c oil
¼ cup rice vinegar
1 tbsp curry powder
1 minced clove of garlic
¼ tsp black pepper
1 c thinly sliced green onion.
Bring water to boil. Stir in peas and rice. Reduce heat and simmer covered until peas are tender-cooked and rice is completely cooked (about 25-30 minutes). Drain mixture and set aside to cool. Combine remaining ingredients and toss together with rice and peas. Chill. Makes about 6 servings |
